Lemon Pepper Chicken (Meal Kit)

FRESH INGREDIENTSChicken breasts Panko breadcrumbs Lemon pepper seasoning Egg Olive oil Butter Lemon Parsley Salt and pepper Yukon gold potatoes Parsley Broccoli |
INSTRUCTIONS |
1 Prepare Potatoes Wash and dry Yukon gold potatoes and dice. Finely chop parsley sprigs. |
2 Cook Potatoes In a small fry pan, add diced potatoes then drizzle olive oil. Season with salt and pepper and add sprinkles of parsley. Cook on medium low heat until stirring occasionally. Add the butter and season more with salt and pepper to your desired taste. |
3 Prepare Panko Mixture Mix together panko breadcrumbs, lemon pepper seasoning and salt to taste. Pour mixture onto a plate or into a shallow bowl. |
4 Mix Egg Wisk egg in another shallow bowl. |
5 Cook Chicken Heat olive oil in a large pan over medium high heat. Coat chicken breasts in the egg mixture and then the dry mixture turning to coat evenly. Place coated chicken in the heated pan and cook for 5-6 minutes per side or until done. Remove chicken from the pan when done and place on plate. Cover to keep warm. |
6 Steam Broccoli Rinse broccoli and cut into bite size pieces. Add 1 inch of water to a saucepan with a lid. Add the broccoli. Let steam over medium high heat for 10-15 minutes or until your broccoli is done to your desired tenderness. Season with butter, salt and pepper |
7 Server Melt the butter in the pan, squeeze lemon into pan and whisk together. Season with salt to taste. Divide the chicken, broccoli and potatoes between two plates. Spoon the sauce over the chicken. Sprinkle with parsley and serve. |
